The Restaurant 

Don Sanchez’ cuisine can best be described as contemporary Baja fusion offering a vast selection of steaks and local seafood complemented by farm fresh organic produce coupled with a fine wine selection of over 300 labels. The restaurant is at the apex of the culinary tourism restaurant standard in all of Los Cabos, Mexico. This summer’s half-of-a-million-dollar remodeling investment yielded the large Hacienda-style courtyard and dining area which provides one of the most unique restaurant experiences in the entire destination.

For all comers, Don Sanchez Restaurant in downtown San Jose del Cabo has earned its stellar reputation, offering service with a smile, boasting beautifully appointed flowers and fountains lighting up the intimate spaces with soft live-jazz music in the background setting the most delightful ambiance.

Award-winning Owner and Executive Chef Tadd Chapman was voted Chef of the Year 2010 and for good reason. His culinary style takes a lighthearted approach to cooking, sticking to classic recipes for a foundation but adding a little creative Mexican zing to blend seemingly disparate culinary traditions. There are plenty of contemporary Baja fusion dishes for vegetarians as well on the new, revamped fine dining menu.

The result is what is considered to be one of the best contemporary Baja fusion restaurants found within the state of Baja California Sur.

As of October of 2012, Don Sanchez offers an uncompromising and passionate devotion to the quality of their new, 300+label wine program. The restaurant features the breadth of top, select wines from around the world, outstanding depth in mature vintages, excellent harmony with the menu and superior organization, presentation and wine service. A sommelier greets patrons with a superb wine list and assists diners with their wine selections, which can compliment their menu choices.

The Menu – Contemporary Baja Fusion Cuisine

Over the last year, Don Sanchez Restaurant has redefined itself both in design as well as approach to fine food and wine experience. The food, service and quality are consistent with the same standards found in North America as they strive to constantly improve and innovate.

Proudly, the majority of their high-quality produce is grown and harvested from local organic farms. The seafood comes from local fisherman ensuring the best, freshest quality. Fresh oysters and clams are delivered 3 times a week and our fish daily. All of our produce and seafood are environmentally sustainable and checked regularly for consistency.

One of our standards is to only serve “grass-fed” beef from Sonora or American choice beef, which is aged to perfection, and consistent with the same processing standards found in the U.S.A. Salt used in Don Sanchez Restaurant is natural uniodized sea salt from Guerrero Negro in the Northern Baja Peninsula.

The Wine

Don Sanchez features the breadth of top, select wines from around the world, outstanding depth in mature vintages, excellent harmony with the menu and superior organization, presentation and wine service.

In keeping with tradition, most of the wines from Don Sanchez Restaurant remain local, coming from the Guadalupe Valley in the Northern Baja Peninsula. The Guadalupe Valley is at the forefront of the Baja wine movement and has over 50 wineries – artisan, boutique, and commercial, both large and small that are producing some remarkable wines.

Don Sanchez’ constant innovation has given them the opportunity to serve guests best by making these fine wines available for purchase in the restaurant store at affordable prices.

Location

Don Sanchez Restaurant is located in the historic, downtown district in San Jose del Cabo, just a block from the mission site. Don Sanchez occupies one of San Jose del Cabo’s oldest buildings called Edificio Eclipse which was restored in 2006 and completely remodeled in the summer of 2012 and is one of the town’s best examples of Mexican colonial architecture. Beautiful cantera stone trimmed wooden doors lead you through a 300 plus bottle wine cellar into a hacienda style courtyard surrounded by date palms, colorful bugambilia, tamarind and mango trees. The restaurant venue allows for an intimate dining experience for couples, VIPs, families or small groups through private “buy-outs” for larger groups, incentive programs and weddings with seating up to 350 people.

Event Dining

Don Sanchez is a full-service event-dining establishment catering to groups from as few as four up to 350 people. Don Sanchez excels in providing the best quality within a fantastic, controlled environment venue and ensuring the optimal number of staff to attend to event details.

Don Sanchez combines its infrastructure with the event coordinator’s needs allowing for the best experience available in Los Cabos. Each guest will have an extremely personalized and memorable time, no matter the size of the group. As Don Sanchez has grown especially since their remodeling project completed in November 2012, they have been moving towards the full-service, event-dining model as their focus due to their unique venue.

Don Sanchez has evolved into one of the most sought after restaurants for weddings, wedding receptions and after-parties. For those who love the feel of a something a bit more fun with food and music to dance to, Don Sanchez has been completely remodeled and provides not only various live group options but also dance floor facilities and audio / visual equipment. The Chef

The owner and Executive Chef F. Tadd Chapman hails from Vancouver Island, on the beautiful west coast of Canada where he began his culinary studies at the age of 15. Through high school Tadd work at the Winchelsea House restaurant under Swiss Chef Gerd Voight and graduated with honors while enjoying a class load consisting of 50% culinary classes in Dover Bay Secondary’s professional kitchen. After high school Tadd chose the culinary arts program at VIU (Malispina) under Master Chef Hubert Scheck, and Chef Alex Rennie among others, excelling once again graduating at the top of his class averaging a 3.9 GPA. After working for CP Hotels and Resort for a year, Tadd was coaxed down to Mexico by his father in 1998. Quickly falling in love with Los Cabos and the Mexican culture, Tadd moved down a month later to open his first of many restaurants, The Tulip Tree in April of 1998. Later opening Habaneros in 2004, Tadd coined the term Mexican Fusion Cuisine to best describe his imaginative use of local ingredients and concepts with international flavors. In 2010 Tadd was voted “Best Chef in Los Cabos” by the general public in the Cabo Social “Best of Cabo Awards”. In summer of 2012 the prestigious Mexico Traveller Magazine featured Tadd along with 2 others as one of the top celebrity chefs of Mexico. Fourteen years and many restaurants later, Chef F. Tadd Chapman and his restaurants (Habanero’s Gastro Grill, Don Sanchez) have become  important pieces in the Los Cabos dining and social scene. Tadd is also a generous contributor to community and local charities. Look for Chef Chapman’s newest concept, The Retro Burger Bar, newly opened in November 2012.

Meet Noel (above centre), he was our waiter at Don Sanchez today where we had THE BEST Mexican food we’ve had during the whole 3 weeks or so that we’ve spent travelling in Mexico so far. After toying with the idea of ordering nachos and then deciding not to, Noel (in the accommodating and friendly way that Mexicans do) brought them to us for free – and he taught us to make the salsa too.

We came across this place, again, after following the recommendation of a local in response to us asking “What’s your favourite Mexican restaurant in town?”. Asking this, or versions of this question, has got us to so many awesome places and Don Sanchez has easily given us the best Mexican food so far.

Look at all those smiley faces, they’re so smiley because we’re eating the salsa that we made with Noel’s help. After this we had spiced chicken tacos with mint-slaw, mango & pineapple salsa, refried beans and corn rice. A-M-A-Z-I-N-G!

As well as learning how to make salsa, we’ve also learned that in Mexico if you want to order water for your table you need to order it in an American accent and drop the T in waTer – or in Spanish of course – as this was the 3rd time a waiter didn’t understand what I was talking about!
